Green Chorizo and Egg 63 Special

This week's special comes courtesy of Frysmith Ali Romo. Ali went all fancy pants and made her own sausage from pork, poblano chiles and a bunch of herbs. The special starts with fries, then it gets a little Manchego, Jack and paprika vinaigrette. This is topped with sauteed fennel, shallots and the homemade sausage. There's more. Ali's special is finished with oven-dried tomato and an egg 63.
This thing is tasty! And I think I need to book more prep hours on the truck because it's going to take all day to write out the special board.
