Cocktails at BreadBar

The most fun I've had so far prepping for our dinner at BreadBar for the Hatchi Truck Stop has been making up these here signature cocktails. This Thursday, the 28th, is the only time you can try them, seeing as there's no such thing as a food truck liquor license. They both use ingredients (poblanos or our Cock N Bull Ginger Beer) that we feature on the truck. They're also both pretty interesting but don't worry that they've been randomly thrown together. I tested each one. Again and again. And again.
The "Rajas Margarita" gets interesting but not overbearing flavor from poblano chiles. The base is silver tequila, light rum, and St. Germain (mmm, elderflower) with citrus and sage.
The "Arnold Alcohalmer" starts with black tea infused vodka and lemon. It has cardamom, honey, mint and rosemary and a good splash of ginger beer. And I can't believe we actually named it that.

Ultimate fries: Hand-cut Kennebec potatoes fried in duck fat topped with fleur de sel & truffle bacon tarragon aioli & homemade ketchup
"Potato Risotto" creamy diced potatoes in roasted beet and gruyere sauce topped with smoked Jidori chicken
Uni & butter pressed in a baguette, served with green apple jalapeno slaw
Wild Salmon & glazed veal sweetbreads, celery root fries, corn & parsley puree
Lamp chop, smoked eggplant relish & miso spinach
New York steak, yuzu chimichurri & heirloom tomato and Israeli couscous salad
Sweet potato fry dessert with bourbon whipped cream & pecans
Banoffee: Rum-soaked bananas, toffee, coconut mousse, lime zest & graham cracker crust

Habanero Carnitas Fries

This week's special is fries with carnitas cooked with habanero chiles and orange juice. It's got Jack cheese. Then, cilantro and radishes cut the richness and heat. Note that these fries are spicy. Not cartoon-steam-coming-from-ears-and-nose spicy. But hot enough.
